Pecan-crusted Oven Fried Chicken

This chicken was crunchy and delicious. I served it with favorite dipping sauces, but it was yummy enough to stand on its own. The combination of pecans and cornmeal give it a really great and different flavor than typical chicken. Enjoy!

2 lbs chicken tenders
2 large eggs
1/3 cup milk
2/3 cup finely chopped pecans
1/2 cup cornmeal
1/3 cup wheat flour
1 tsp salt
1 tsp onion powder
1/2 tsp ground pepper
Preheat oven to 425 with rack in the center. Spray baking dish with Pam.

Whisk together eggs and milk. In another bowl, mix together pecans, cornmeal, flour, salt, onion powder and pepper.

Rinse chicken under cold water and pat dry with a paper towel. Dip chicken into egg mixture, then dredge in the pecan mixture. Place the chicken in the baking dish. Bake approximately 25 minutes.

I LOVE pecans. They are one of my all time favorite nuts! This sounds interesting and yummy.

I would be the only one to eat this at our house. Everyone hates nuts, but I love them. I am sure I would love this too.
