I found this recipe in a book I came across yesterday and I made it last night for my family. The sauce on top is optional and some liked it better with and some without. It was a hit with everyone and most people had seconds. That means a lot around here. The chicken breasts I had were quite large so I cut them in half and had to use a little extra of the coating ingredients. I am always looking for a good baked chicken recipe and I will definitely make this again. It is pretty easy and really yummy. Happy cooking!
Ingredients:
2 cups crushed Ritz crackers
3 Tablespoons grated Parmesan cheese (I used a little extra)
2 teaspoons garlic salt ( I accidentally left this out and sprinkled a tiny bit on top and I don't think it needed any more than that)
8 boneless, skinless chicken breasts
1 cup plain yogurt
1/4 cup butter, melted
1 recipe Sour Cream Chicken Sauce (Optional, recipe below)
Directions:
Combine cracker crumbs, cheese and garlic salt. Dip each piece of chicken in yogurt to coat and then in crumb mixture. Arrange in greased 9 x 13 baking dish. Drizzle with melted butter. Bake at 350 degrees for 45-50 minutes. Top with Sour Cream Chicken Sauce, if desired.
SOUR CREAM CHICKEN SAUCE
1 can cream of chicken soup, undiluted
1/2 cup sour cream
In a small sauce pan heat soup and sour cream together over low heat, stirring frequently. Serve over chicken.
