Artichoke Chicken

This was really delicious. My kids didn't care for the artichoke mixture on it but John and I loved it. If you like artichoke dip, you'll like this. I had pinenuts left over from when I made Pesto Pasta Salad, so I put some of those on too. It is really easy and really yummy.
The potatoes were cut up, steamed, seasoned with rosemary, salt, and pepper, then fried in the same fry pan that the chicken was cooked in.

Artichoke Topping
1/2 cup chopped artichoke hearts (I used them from a can)
2 tsp. chopped fresh parsley
1 oz. parmesan cheese divided
2 tsp. mayonnaise.

Cook the chicken in oil and season it with rosemary, salt, and pepper. (Really you can season it anyway you like it). When it is cooked, put the artichoke topping on the chicken and put it under the broiler for 4-6 minutes or until the topping is deep golden brown (as you can see, mine didn't stay in long enough). I doubled the recipe but since John and I were the only ones to eat the artichoke topping, it didn't need to be doubled. Enjoy!!

That looks really good. I have never, ever made anything with artichokes! This looks good enough to possibly remedy that! Those potatoes look scrumptious. I am going to try them. Did you use fresh rosemary or dried? Thanks!

The last time I cooked with artichokes left a bad taste in my mouth for artichokes but I want to try this. It sounds so interesting.

I used a dried rosemary seasoning mix from a bottle.
