Fried Zucchini


Need something new to make with your zucchini? You can't go wrong with this dish. Tried and true for years by my mom and I'm carrying on the tradition.

Ingredients:
Zucchini (also so good with eggplant or my favorite: yellow squash)
Flour
Eggs
Corn Flake Crumbs
Kosher salt
Oil

Directions:

Cut the zucchini into slices, dip in the flour, then the eggs, then the corn flake crumbs. Fry in oil until brown and crispy on both sides. Drain on plate covered with paper towels and sprinkle with kosher salt.

i can't wait to try this! i have tried to do just the egg thing but my family wasn't crazy about it. i do have a wonderful zucchini casserole that we like. other than that we usually just do steamed with butter!

I love fried zucchini at restaurants with ranch dressing. Now I can try it out at home, too. It looks yummy.

my zucchini crop unfortunately didn't produce this year but these fried zucchini look great.

we grilled some bratwurst tonight and i made these fried zucchini as my side. it was awesome. i'm so glad to know how to do a proper breading!!! and the kosher salt was the perfect way to finish it off.

I love it when you made these Tawnie! I made some the other day and Jacob (Who only eats mushy green beans from a can) he even loved them!!!!!! They just melt in your mouth they are so good! I sprinkle Kosher Salt on top after I pull them out of the oil. I'm a saltaholic.

i made onion rings tonight using thin slices of red onion (yum!) with these same ingredients & directions. they were AWESOME!

We made these last week. My kids actually ate them. Wow. That is serious. I needed to crush my cornflakes more finely, but they were tasty little things.

I have crushed corn flakes cereal often but I try to always have a box of Kelloggs crushed corn flakes on hand. Sometimes it is good with more crunch. Sometimes it's easier to have it done already.

This recipe sounds delicious! My mom had a similar recipe, but with slight differences. She always used cornflake crumbs and a little bit of condensed milk. And, we'd just dip the zucchini in the egg/milk mixture, then coat the pieces in the cornflake crumbs and fry them up!

I definitely think the cornflake crumbs make all the difference, though. Because, I've known many people who don't use them, and although their fried zucchini is always tasty, in my head, I'm always thinking that they lack that great crunch! :3
