This salad was made by my brother and sister-in-law for a family get-together and was quite the hit. It is pretty simple with just cutting and throwing the ingredients together with a great, simple dressing.
Ingredients:
3 large tomatoes, diced
1 green bell pepper, diced
1 bunch green onions, chopped
2 cans kidney beans, drained and rinsed
1 small bottle Catalina dressing
1 c. cheddar cheese, shredded
1 can olives, sliced
1 regular-sized bag Fritos
Directions:
Mix tomatoes, pepper, onion, kidney beans and dressing. Marinate. Just before serving, add cheese, olives and Fritos.

Mmmm. This sounds really interesting and yummy. Sorry I missed out on this one. If only my family loved Mexican food like I do.
This was a really good salad. I liked it a lot. I would be tempted to add a little chicken or cooked hamburger and call it a balanced meal. That's just how I roll.
I tried this and really liked it. It was different and something interesting to add to any potluck or barbecue. Yum, summer is coming.
