Bean, Barley & Ham Casserole

Another barley recipe. This was a tasty casserole that even the kids enjoyed. I'm not sure they realized it was barley and not brown rice. I cooked the barley in my rice steamer and it turned out beautifully.



5 cups cooked barley

1 can Great Northern white beans (drained and rinsed)

1 onion finely chopped

1 clove minced garlic

1 tbsp. butter

1 can cream of chicken soup

1 cup cubed ham

3/4 cup grated cheese


Saute onions and garlic in butter until golden. Mix all ingredients together in a bowl. Pour into 9 x 13 pan sprayed with Pam. Sprinkle with grated cheese. Bake for 20 - 25 minutes.

That sounds really good and looks so easy. I need to buy some barley and give it a try. I like barley but I've never made it. Thanks for the new ideas.

I really like barley, but I have only made the quick. Is this the quick barley or something different? This sounds really healthy and yummy to me. Thanks for a new recipe!
