My friend Kelli brought this to us when I had Henry. Mm mmmm it was good-especially the homemade, flaky crust. I vowed that I would make this. I decided everyone needs a good ol' Chicken Pot Pie recipe. This is a great one. It is actually the Betty Crocker recipe straight from the cookbook.
Ingredients for Filling:
- 1/3 cup butter or margarine
- 1/3 cup chopped onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cups chicken broth
- 1/2 cup milk
- 2 1/2 cups shredded cooked chicken or turkey
- 2 cups (1 package) frozen mixed vegetables, thawed
Directions for Filling:
Rinse frozen veggies to separate. Drain. Heat margarine/butter in large saucepan over medium heat until melted. Stir in flour, onion, salt & pepper. Cook, stirring constantly until mixture is bubbly then briefly remove from heat while you stir in broth & milk. Heat to boiling, stirring constantly. Boil & stir for 1 minute. Stir in chicken & vegetables.
Ingredients for 10" Pastry:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2/3 cup plus 2 tablespoons shortening
- 4 to 6 tablespoons cold water
Cut shortening/butter into flour and salt until particles are size of small peas. Sprinkle in water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans sides of bowl (1-2 tsp more water can be added, if needed).
Gather pastry and form into 2 balls. Roll out one ball until it is big enough to cover bottom and sides of pan. Press firmly against bottom & side. Then roll out 2nd ball to lay on top. Pour filling into pie. Seal up sides of pie by pinching, fork, etc. and trim off excess.
**Baking Instructions: Bake about 35 minutes or until golden brown.

For a 9x13 pan, double the above recipe. I usually triple or quadruple it!

This sounds like a recipe my mom makes but she just uses already made I think Pillsbury refrigerated pie crusts. (They're not cooked, just the round sheets of dough. One on top, one on bottom. Makes it even simpler. One day maybe I'll grow up....and hopefully I do. But for now, I'm not real excited about making my own crusts, etc.

I think the already made dough can be found near the butter at grocery stores. I have stocked up on them when they are on sale and freeze them in their box. What a simple and great meal. I'm so glad you posted it. And I'll stop commenting now.

I just skimmed through the recipe quickly, but I can't find how long it's supposed to bake. For now I'll just find similar recipe to get the baking time.

yes, tawnie. thanks for the tip about the pre-made dough. i actually got a different pot pie brought to me when henry was born (can't believe how many meals we had brought in) and it was yummy but she had used the premade crust. i could see that being VERY helpful in a pinch, however there aint NOTHING like a homemade, fresh crust.

I'll have to try this. I love chicken pot pie, but have never done a home-made one, always just grabbed the Marie Callendars ones. Your picture is beautiful and makes my mouth water!

I just searched through every cookbook I have and all my recipes until I found a recipe that sounded just right. I then made it and came here to post it. But first I thought I better check to see if one had been posted before since I've made that mistake at least twice before. My recipe is this almost exact. Instead I put in one can of chicken, one can of diced potatoes, and one can of peas and carrots. Delicious!!! Jack asks for chicken pot pie all the time and I never make it so today is his day. I also bought refrigerated pie dough instead of made my own. One day....one day.
