Mexican Chicken Casserole

My friend Jenny brought this to us recently and it was a total hit.  Thanks, Jenny!

Ingredients:

4-6 cooked and cubed chicken breast
2 cans cream of chicken soup
3 cups salsa of your choice
1-16 oz sour cream
2 tsp onion powder
corn tortillas
shredded cheddar cheese
optional-diced green chilies

Garnish-Diced tomatoes, green onions,and sliced olives

Directions:

Mix soup, salsa, and sour cream and chicken in large bowl. In 9x13 greased baking dish layer 4 to 6 tortillas layer with chicken mix and top with cheese. Repeat three times. Cook about 25 min at 350 until hot and bubbly.

This is something we grew up with except for the corn tortillas we used corn chips. You know, me took it one step into the unhealthy.

I made this for dinner the same day it was posted. We Loved it!!! It was so tasty. We halved the recipe and it worked really well. it reheats really well too. Thanks for the recipe! My hubby's usually the one to cook and it was so fun to have a tasty recipe to try. I felt so housewifely! Thanks!


P.s. We thought it would probably work to half the chicken and add rice to it. (cheaper resources) Or to add black beans to each layer. yumm!

we had this again last night. i used my homemade salsa. whoa it was good.
