Layered Chicken Nachos

This is a yummy meal that some members of my family beg me to make. Of course, I have to leave the salsa off a corner for my picky one, but other than that, everyone loves it. This recipe can also be made with cooked hamburger, shredded beef or turkey. Enjoy!

Ingredients:

3 tbsp lime juice
2 tbsp olive oil
1 tsp ground cumin
1 tsp garlic powder (I usually just throw in a tbsp of the bottled Costco garlic)
2 cups cooked and shredded chicken (I usually buy a rotisserie chicken at the store and debone it. Great flavor and easy!)
salt and pepper to taste
Large bag of tortilla chips
1 16 oz can refried beans
2 cups shredded cheese
1 16 oz jar salsa
Sour cream

Directions:

Heat oven to 425 degrees.

Whist together lime juice, olive oil, cumin and garlic. Toss with chicken in a bowl and season with salt and pepper.

Make a layer of tortilla chips to cover the bottom of a 9 x 13 inch baking dish. Evenly spoon refried beans over chips (use the entire can of beans). Top with chicken and sprinkle with 1 cup shredded cheese.

Make another layer of tortilla chips. Add remaining chicken. Spoon half the salsa evenly over chips. Top with remaining cheese.

Bake nachos until heated through and cheese is melted and bubbling (15-20 minutes). Serve hot with remaining salsa and sour cream.

Poor me. Spencer doesn't like anything remotely Mexican so I miss out on yummy meals like this.
Maybe the next time he goes out of town I will pull this one from the archives.
