Christmas Salad

Ingredients:

1 head iceberg lettuce
1 bunch romaine lettuce
1 bunch spinach
1/2 lb. swiss cheese, grated
1/2 lb. bacon, cooked and crumbled
1 pomegranate or can of mandarin oranges or dried cranberries (craisins)

Dressing :

1 3/4 tsp. poppy seeds
3/4 cup white vinegar
3/4 cup sugar
1 1/2 cup oil
1 T. dry mustard
1 1/2 tsp. salt
1/2 sliced red onion

Directions:

Make dressing and let onions marinate for a few hours or even overnight. Toss salad with dressing right before serving.

Notes and tips:

*Pomegranates make this salad so festive. Cut the pomegranate in half and soak in water. If you've never used a pomegranate, you use the little red berries inside the pomegranate.
* You can buy a bag of already cooked and crumbled bacon for cheap either by the dressings or on the spice aisle....don't remember which.
*to make it even more simple, use one kind of lettuce.
*If you don't have time to make the dressing, you can never go wrong with Brianna's Poppyseed dressing. It would be wonderful on this salad.

Love this salad. I'm always glad when I see it at a gathering. Now I need to have a gathering so I can make it.

This is a lot like the spinach salad that my mom makes, except the fruity part. Pomegranates? Sounds so yummy. I need try this.
