Orange Glazed Chicken


This chicken was absolutely delicious and the sauce was good enough to drink plain. My family loved the meal and kept eating the potatoes with the sauce even after the chicken was gone. It dirties less dishes if you have a skillet that can go directly into the oven (no rubber or plastic handle), but can easily be transferred to another pan if you don't.
Ingredients:

5 bone-in, skin-on chicken breasts (these are less expensive than regular chicken breasts, but I'm sure this would be delicious with regular skinless/boneless, as well)
1/2 cup frozen orange juice concentrate
3 tbsp. honey
salt and pepper
3 tbsp vegetable oil

Directions:

In a small saucepan, combine honey and orange juice concentrate. Heat over medium heat until boiling. Lower heat. Pat dry chicken with a paper towel (this prevents splatter when the chicken goes into the oil). Heat oil on skillet to med/high. Salt and pepper the chicken. Place chicken skin down and cook until brown and crispy. Turn and cook for two or three minutes. Pour the sauce over the chicken, using a spoon or basting brush to generously cover the chicken with sauce. Put in a preheated 375 degree oven and continue cooking for 20 to 25 minutes more. Halfway through cooking, spoon sauce over chicken again.

I served this with potatoes. Very delicious!

by the way...those potatoes are cute. I've never made them like that. How do you season them? Post on those please! :)

Okay, we had this for dinner last night. It was good. The sauce gets all thick and "saucy", and the chicken was moist. They kids even liked it. Caulk this one up as a success in our home.
