Ingredients:
butternut squash
little salt and pepper
3 or so Tbsp. brown sugar
Directions:
Peel the squash with a vegetable peeler and dice into bite-sized pieces. Sprinkle with salt and pepper and toss to distribute seasoning. Spread out diced pieces onto a cookie sheet. (I use a silpat on my cookie sheet so the squash doesn't stick during baking). Bake in a 375 degree oven for 30 minutes (or until squash becomes tender - time differs depending on how big you made the pieces). Sprinkle with brown sugar and toss, allowing it to melt into the squash.

WE LOVE Butternut Squash. We tried to grow it this year but didn't get any. Sad. I have never tried it with brown sugar on it, just salt, pepper and butter. We had some last night, but next time I will dice it like you did and use brown sugar. Thanks!

ReplyDeleteWe had this tonight with Leslie's yummy eggplant. I omitted the pepper and didn't add the brown sugar until the last five minutes of baking. It was very tasty.
