Creamy Ham & Potato Casserole

My friend Tiffany brought me this ultimate comfort food after I had my latest baby. I made it for the first time tonight and it was super easy to assemble and a total hit with my family!

Ingredients:

3 1/2 Tbsp butter
1 small onion, chopped (I used about 1/2)
3 1/2 Tbsp flour
1 tsp salt
1/4 tsp pepper
3 cups milk
6 medium potatoes, thinly sliced
1 cup cubed ham.

Directions:

Heat oven to 350 degrees. Grease bottom and side of 2 quart casserole dish (I used a 9x13 pan.) Melt 3 T butter in saucepan over medium heat. Sautee onion in butter until tender. Stir in flour, salt & pepper. Cook until it becomes a smooth paste. Pour in milk and heat to boiling, stirring constantly. Once boiling, stir for one more minute. Place sliced potatoes and cubed ham in bottom of dish. Pour sauce over the top. Cover and bake 30 minutes. Uncover and bake 30 more minutes, or until potatoes are tender. Let stand 5 to 10 minutes (sauce thickens as it stands) and serve with salad or vegetable.

This was our delicious Sunday dinner yesterday. I served it as shown, with peas, and it was enjoyed by the whole family. Great flavors and eeeeaaasssy!
