My family loves orange chicken. The Costco kind used to be a favorite, but they changed brands and then raised the price so I've tried to come up with some variation that my family will like as well. This turned out really delicious and I'll definitely be making it again!
Ingredients:
1 chicken, cooked and deboned (I buy the Costco rotisserie
chicken, debone it and use it right away or freeze it.
Sometimes I buy a couple at a time. SO EASY!)
3 cups water
6 tbsp. frozen orange juice concentrate
1/2 cup brown sugar
2 tbsp. soy sauce
1 tbsp. minced garlic
3 tbsp. cornstarch
Directions:
Combine orange juice concentrate with water in a skillet over medium heat. Stir in brown sugar, soy sauce and garlic. Bring to a boil. Reduce heat. Mix together cornstarch with 1/4 cup warm water, removing all lumps. Slowly add to skillet, stirring constantly to prevent clumping. Stir a minute or two until sauce thickens.
Add chicken and mix to completely coat chicken. Serve over brown rice. Add vegetables and you've got a meal. Quick and tasty.

wow. the rotisserie idea sounds like it could be a time saver. i've never tried the costco orange chicken but this sounds yummy!
