3 c. flour
1 1/2 tsp. salt
1 1/2 tsp. baking soda
2 1/2 c. sugar
3 eggs
3 mashed-up bananas
1 c buttermilk (or 1 c. milk & 2 tsp. vinegar, sit for 10 minutes)
1 1/2 tsp. vanilla
1 1/2 tsp. almond (I do not add this)
1 c. oil
nuts (optional)
Directions:
Combine ingredients. Pour into greased & floured baking pans. Bake at 350 degrees for 1 hour and 1/2 (Baking time completely depends upon size of baking pan. So, watch closely and do the clean toothpick test.) Have glaze ready.
Optional (But amazing) Glaze:
1 Tbsp. melted butter
3/4 c. sugar (I use about 1/2 c.)
1/4 c. orange juice
1/2 tsp. vanilla
1/2 tsp. almond (I do not add this)
Combine ingredients. Poke holes in top of bread and pour on while still hot.

Oh Man!! You read my mind. John brought home so bananas from work that need to be used or thrown in the garbage. How did you know?!! This is the best banana bread. DECLICIOUS!! THanks for posting.
Are you sick of hearing from me yet? Here is what I did different....first, I burnt the darn thing. Oops. Other than that, I've never made buttermilk with vinegar and was afraid of it so I used 1 T. lemon juice with the milk. Then I realized if Lisa does it, then it must be good because her bread is amazing. So next time. Second, instead of using almond flavoring, I used butter flavoring. mmmmm. Who wouldn't like more butter flavor in anything. It's yummy. Third, my bananas were rather small so I used 4 instead of 3. So other than burning the bread and not being able to eat the whole thing, it turned out delicious. I made 2 pans and cooked it for 1 hour 15 minutes. It needed 5-10 minutes less in my oven.

The problem is that I don't have any bad bananas. I have to go buy some and then wait for them to decay. That only takes 6 hours though right? :)
I will give this one a try as soon as I am supplied with banana mush.
