My friend brought this to dinner last night and I had to have the recipe. Spencer poured it all over his food. She used it on a salad with green leaf lettuce, tomatoes, avocado, feta cheese and almond slivers, but I'm sure it would be good with everything. Spencer even poured it on his plate and dipped his bread in it after the meal was formally over. I am going to make it and keep it on hand for all of Spencer's dipping needs.
Ingredients:
1/2 cup balsamic vinegar
3/4 cup olive oil
2 tsp brown sugar
1 clove garlic
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ground mustard
1 tsp. thyme
1/2 tsp basil
1/2 tsp oregano
1/2 tsp parsley
Directions:
Place all ingredients in blender and blend until smooth. It if is too thick you can a add a few tsps of water until is is the desired consistency.
Store in airtight container in the refrigerator for up to 3 weeks.

That sounds wonderful!!! Can't wait to make this. Just have to splurge to restock on Olive Oil from Costco.
Tawnie, I never buy olive oil from Costco. You buy so much of it that unless you are making humongous batches of things, you won't be able to use it up before it goes rancid...which olive oil tends to do quickly. Spencer said that it lasts longer if it is in a glass bottle. I always just buy it in the smaller bottles from the grocery store so that it isn't around too long to go bad. Just a tip I have learned over the years.
